One of my all time ‘comfort foods’ is a whole roasted chicken with mashed potatoes and gravy and roasted carrots. This version is roasted in the oven and is super easy, but my husband also likes to smoke the chicken on his Big Green Egg, which is pretty incredible tasting, but also requires a little more time. This particular recipe is great for weekend meals (although you will need about 1 1/2-2 hours for baking time), but it is also great for company. I like to make it and then have everyone else bring a side dish since people can bring all kinds of different things because what doesn’t go with chicken? The secret though is to not cook the chicken too long because otherwise it won’t come out moist and tender.

Chicken – 1 (4-5 lb.) whole roasting chicken

Herb rub –

1/4 cup butter, softened

1 tsp. dried rosemary leaves, chopped

1 tsp. salt

1/4 tsp. pepper

2 tbsp. fresh parsley, chopped

1 tsp. garlic, finely chopped

Heat oven to 350 degrees.

In a small bowl, stir together all the herb rub ingredients, then rub onto chicken. Place chicken, breast side up, in a roasting pan and bake for 1 1/2-2 hours.
