I usually make shrimp with pasta or we grill it with vegetables, but I was trying to think of a different way to make it since shrimp seems to be a big crowd pleaser in my house. I came across this recipe on Pinterest and had to make a few adjustment to it, but we ended up all loving it. It’s also super easy to make with little cleanup. You just need a bowl to toss all the ingredients in and then a cookie sheet to it bake on. Easy peasy!
1 1/4 lbs. small shrimp, peeled and deveined
1 red bell pepper, sliced thin
1 orange or yellow pepper, sliced thin
1/2 of a red onion, sliced thin
1 1/2 tbsp. olive oil
1 tsp. salt
1/4 tsp. pepper
2 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground cumin
1/2 tsp. paprika
freshly squeezed lime
12 mini flour tortillas, warmed in the microwave
garnishes: salsa, cilantro, sour cream
Preheat the oven to 450 degrees.
In a large bowl, combine shrimp, vegetables, and spices.
Spray a baking sheet with cooking spray. Spread shrimp and vegetable mixture onto the baking sheet. Bake for 8-10 minutes, then turn over and broil for another 2 minutes or until shrimp is cooked through. Squeeze the lime juice over the fajita mixture. Serve with warmed tortillas and your choice of garnishes.
